How To Cook Sausage and Egg Casserole

Ingredients:

  • 1 pound mild bulk sausage, browned, drained
  • 6 eggs
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 6 slices bread, crusts removed, toasted
  • 2 cups milk
  • 1 cup shredded Cheddar or Monterey Jack cheese

Preparation:

Cut each slice of toast into 4 pieces. Beat eggs, milk, and seasonings together. In buttered casserole, layer half the toast, half of the sausage, and sprinkle with half of the cheese. Pour half of the egg mixture over the layer. Repeat for second layer. Cover and refrigerate overnight. Bake, covered, at 325° for 45 to 60 minutes, or until puffed up. Let stand 5 minutes before serving.

Ingredients:

  • 6 large eggs
  • 1/2 cup heavy cream or whipping cream
  • 1/4 teaspoon salt

  • 1 can (4 ounces) chopped mild green chile peppers, drained
  • 1 cup shredded Cheddar cheese

Preparation:

Preheat oven to 325°.
In medium bowl, beat eggs with cream, salt, and pepper until smooth.Stir in chile peppers. Sprinkle cheese over the bottom of a lightly greased shallow baking dish. Pour egg mixture over cheese. Bake for 20 to 25 minutes, or until set. Broil for a minute or so to brown top, if desired.

Bake in preheated 325° oven for 1 to 1 1/4 hours, or until lightly browned or until a knife inserted in center comes out clean. Cool for 10 minutes before cutting.

Ingredients:

  • 6 large eggs
  • 1/2 cup heavy cream or whipping cream
  • 1/4 teaspoon salt

Ingredients:

  • 1 pound bulk pork sausage
  • 6 large eggs
  • 2 cups milk
  • 1 1/2 teaspoons dry mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon ground paprika
  • 1/4 teaspoon ground nutmeg
  • dash ground cayenne pepper
  • 3 slices French or Italian bread or other firm white bread, cubed
  • 1 cup shredded sharp Cheddar cheese, about 4 ounces

Preparation:

In a large skillet, crumble sausage; brown over medium heat until no longer pink. Drain well, patting with paper towels to absorb excess grease.
In a large bowl beat eggs, milk, and seasonings until smooth and well blended. Stir in the drained sausage and remaining ingredients (bread cubes and shredded cheese). Pour the mixture into a lightly buttered 8-inch square baking dish; cover and refrigerate overnight.
Remove from the refrigerator 1 hour before baking time. Bake in preheated 325° oven for 60 to 75 minutes, until eggs are set and lightly browned. A knife inserted near center should come out clean. Cool for 10 minutes before cutting and serving. 

How To Cook Mississippi Breakfast Bake With Sausage Patties


This breakfast casserole is a tasty combination of eggs, bread, sausage, diced tomatoes and green onions, and Monterey Jack or Cheddar cheese. It's one of our favorite breakfast casserole recipes.

Ingredients:

  • 4 slices bread, crusts removed
  • 6 to 8 sausage patties, cooked
  • 1/4 cup sliced green onion
  • 1/2 cup diced tomato
  • 1 cup Cheddar or Monterey Jack Cheese
  • salt and pepper
  • 6 large eggs
  • 1 cup milk or half-and-half
  • 1/4 teaspoon salt
  • 1/4 teaspoon Cajun or Creole seasoning or seasoned salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon paprika, optional

Preparation:

Tear bread into small pieces and sprinkle in bottom of a lightly buttered 2-quart casserole. Arrange sausage patties over the bread; sprinkle with green onion, tomato, then the cheese. Sprinkle lightly with salt and pepper. In a medium bowl, whisk together the eggs, milk, and remaining seasonings. Pour slowly over cheese layer. Refrigerate overnight or bake immediately. If refrigerating overnight, take casserole out of refrigerator about 1/2 hour before baking. Bake at 350° for 40 to 45 minutes, until set in middle.

This is a tasty breakfast or brunch casserole for a busy day. Serve this casserole with fresh or warm fruit for an easy and satisfying breakfast.

Ingredients:

  • 6 large eggs
  • 1 3/4 cups milk
  • 4 slices bread, torn or 3 croissants, sliced and torn into 1-inch pieces
  • 8 to 12 slices bacon, cooked and crumbled
  • 10 to 15 sliced grape tomatoes or 2 small tomatoes, diced

Ingredients:

  • 12 to 16 ounces smoked andouille sausage, thinly sliced
  • 1/2 cup chopped onion
  • 1/2 cup chopped red or green bell pepper
  • 6 large eggs
  • 1 1/2 cups milk
  • 1 teaspoon Creole seasoning
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh chopped parsley, optional
  • 4 slices bread torn in 1-inch pieces, or use 2 large croissants, sliced sandwich-style and torn
  • 2 medium tomatoes, diced
  • 2 cups shredded Cheddar cheese
  • salt and pepper

Preparation:

Heat oven to 350°. Butter a 2-quart baking dish.
In a large skillet, cook sliced sausage with the onion and bell pepper until vegetables are translucent. Whisk eggs with milk in a bowl with the Creole seasoning, pepper, and parsley, if using; set aside.

How To Cook Breakfast Casserole With Sausage, Eggs, and Biscuits


Easy baked split biscuits make the base for this flavorful sausage and egg breakfast casserole. Use a Mexican style blend of cheeses in this recipe, or a combination of Cheddar cheese and Monterey Jack.

Ingredients:

  • 8 frozen or refrigerated biscuits, baked according to package directions
  • 1 pound sausage
  • 1 can (4 ounces) chopped mild green chile
  • 1 small onion, chopped
  • 1/2 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried leaf oregano
  • 2 cups shredded Mexican-style cheese blend, such as Cheddar Jack or a similar combination
  • 8 large eggs
  • 2 cups milk

Preparation:

Heat oven to 350°.
Butter a 2 1/2- to 3-quart baking dish. Heat Split the biscuits and line the baking dish with the biscuit halves, cut side up.
Brown sausage in a large skillet with onions, breaking up the sausage as it cooks. Add the chile peppers and seasonings. Sprinkle the sausage mixture evenly over the biscuit layer. Top with the cheese.
In a large bowl, whisk together the eggs and milk with salt and pepper. Pour over the cheese layer. Bake for about 25 to 30 minutes, until set. A knife should come out clean when inserted in the center.
Serve with sliced tomatoes or fresh salsa on the side

How To Cook Breakfast Egg Bake With Chicken Sausage


I used Buffalo seasoned chicken sausage, but feel free to use your favorite flavors in this easy, flavorful brunch or breakfast casserole. Serve this casserole with sliced tomatoes and warm stewed fruits for a delicious weekend or holiday brunch or breakfast.

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 60 minutes

Yield: 4 to 6 servings

Ingredients:

  • 6 large eggs
  • 1 1/2 cups milk
  • 1 teaspoon chicken grill seasoning, Creole seasoning, or a seasoned salt mixture
  • 3 slices bread, torn in small pieces
  • 12 ounces chicken smoked sausage, your favorite flavors
  • 1 cup sharp Cheddar cheese

Preparation:

Grease a 2-quart baking dish or spray with nonstick cooking spray.
Whisk together the eggs, milk, and seasoning.
Arrange bread pieces in the baking dish; top with the sliced sausage then cheese.
Cover and refrigerate overnight or let stand for 15 minutes and bake. If you refrigerate overnight, give the casserole about 20 to 30 minutes to come to room temperature before baking.
Bake at 350° for 40 to 50 minutes, until firm and lightly browned around the edges.
